WBKatering™ is the public operating brand of White Box Kitchen & Catering, a Mobile Food Operations platform designed around one simple idea: feed people efficiently, consistently, and at scale without sacrificing quality.
Our system is built to support everything from farmers markets and street vending to weddings, corporate catering, community events, and emergency support feeding. Instead of relying on one fixed service style, WBKatering uses a modular field-service model centered on a Mobile Food Kitchen (MFK) and expandable customer service stations that allow us to match the event, the crowd, and the service level required.
WBKatering supports several service modes under one operating system:
At the center of the system is the MFK — Mobile Food Kitchen. The MFK acts as the production hub for the operation. It is where food is heated, held, finished, and prepared for service. Depending on the event, the MFK can support one customer-facing station or multiple service stations at the same time.
Our primary field kitchen platform. The MFK is designed to:
Produce and rethermalize food in volume
Hold hot and cold menu components
Support catering, events, and field service
Act as the central kitchen for multiple serving stations
A CCI is a customer-facing service station supplied by the MFK. CCIs can be configured for different jobs, such as:
Meal CCI – plated meals, bowls, cups, and entrées
Drink CCI – lemonade, tea, dirty sodas, bottled beverages, and hydration
Snack CCI – hot dogs, pickles, frozen bananas, caramel apples, corn, and other quick items
Plated Service CCI – wedding and premium event service stations for section-based plating and runner support
WBKatering uses internal deployment codes to match staffing, equipment, and service layout to the event.

CCC-4-WP-6 = 1 MFK, 4 CCIs, Wedding Profile, 6-hour service window

For customers, this means we can scale the service package to the event. For staff, it means the equipment, staffing, and replenishment plan can be standardized before wheels ever move.
WBKatering is built around Mobile Food Operations, not just traditional food truck service. That means we design menus and workflows for repeatability, holding quality, and deployment speed.
Many WBKatering menu items are produced in batches, vacuum sealed or packaged for holding, then reheated and finished for service. This allows us to:

Our menu system is built from modular food components that can be mixed, matched, and scaled depending on the event:
Protein Units (PU) – pulled pork, chicken, beef, sausage, curry dishes, chili, and other protein-based entrées
Vegetable Units (VU) – vegetable medleys, greens, beans, and sides
Starch Units (SU) – rice, pasta, potatoes, mac & cheese, and other filling bases
Dessert Units (DU) – sweets, snacks, dessert packs, and event add-ons
Beverage Units (BU) – teas, lemonades, dirty sodas, waters, and drink service components
This lets us build everything from simple hot dog service to layered meal cups, rice bowls, plated meals, family-style catering, and event-specific menu packages using a common production backbone.

In this mode, the MFK remains the central production hub while plated-service CCIs are placed closer to guest sections so runners and servers can move food efficiently and keep service polished.
